Winter 2007 Chef Boley Dinner
Each quarter, selected graduates of The Art Institute’s Culinary Arts Program create and execute a six-course menu with the assistance of current Art Institute of Dallas culinary students. The latest menu features Cashew-crusted Sea Bass, Pumpkin Bisque with Nutmeg Crème Fraiche, Poached Pear and Microgreen Salad with Maple Vinaigrette and Spiced Walnuts, Cranberry Royale Sorbet, Beef Tournedos with a Fig Maytag Bleu Cheese Demi-Glace and Wild Mushroom Risotto, and Chocolate Mousse Darjole with Pomegranate Coulis. Each course is paired with an appropriate wine.
This quarter’s featured graduates are Matthew Melton (’01) and Mohammed Assi (’06). Both graduates now work at Lawry’s The Prime Rib in Dallas: Melton as Executive Sous Chef and Assi as Carver/Tournant.
The tickets are $40.00 per person, and proceeds benefit The Art Institute of Dallas’ Chef Boley Scholarship Fund.
